How to Bake Red Velvet Cupcakes

Everytime I go out to a cafe or any shop that sells red velvet cupcakes or cakes I feel frustrated because they're usually quite expensive. So I decided to bake them myself. Credit to my cousin Fairuz's recipe! Because sharing is caring, meh I ajar camne nak buat, it's pretty easy!


2 1/2 cups all purpose flour
2 cups sugar
1 tablespoon cocoa
1 teaspoon salt
1 teaspoon baking soda
2 eggs
1 1/2 cups oil
1 cup buttermilk (click here to learn how to make buttermilk)
1 tablespoon vinegar
1 teaspoon vanilla essence
25ml red food colouring (about 1 small bottle)

Lightly stir eggs in a medium bowl with a wire whisk. Add remaining liquid ingredients and stir together with whisk until blended. Set aside.

Place all the dry ingredients in your mixing bowl and stir together really good with another wire whisk. Start with the flour and sugar, then add the rest.

Add the wet ingredients to the dry ingredients and mix on medium-high for about a minute or until completely combined.

Pour the batter in muffin pans just a little over 2/3rds full. 
Warning: the cupcake will rise quite high!
Make sure the oven has been pre-heated at 180 degrees celcius.
Bake for about 20 minutes or until a toothpick inserted comes out clean.

Make the frosting!

Cream Cheese Frosting
250g cream cheese, room temperature
250g butter, room temperature
1 1/2 teaspoon vanilla essence
4 1/2 cups icing sugar

1. Sift sugar and set aside.
2. Beat cream cheese and butter on high until creamy. Add vanilla essence.
3. Then, add the sugar bit by bit.
4. Beat until smooth.

Remove the cupcakes from pans to cool on a wire rack.
Put the frosting on top of the cupcakes, however you want it.
Decorate the frosting to your liking (I used the crumbs from the cupcake)
